Yellowtail BBQ Belly Sticks
In the summer, there's nothing like catching yellowtail and then, going home and having a yellowtail Bbq! For this recipe, I'm using yellowtail belly. I've been thinking and planning on how to cook yellowtail bellies for a long time. Finally, I've come up with yellowtail Bbq bellies on a stick.
And since I've been making homemade dry rubs and Bbq sauces for pork ribs, I often wondered if yellowtail bellies would be good lathered up in Bbq dry rub and sauce. So, I tried it at home and my hunch was right. My new recipe is called “Yellowtail Bbq Belly Sticks.” Let's just say, they are insane and good. So, I hope you give them a try
Since you've got fresh yellowtail and your grill fired up, give a grilled yellowtail sandwich try!
Bbq Yellowtail Belly Sticks (serves 3)
1 pound yellowtail belly, cleaned, deboned, inner lining stripped, then cut into 4”x1” strips
3-4 tablespoons vegetable oil
15-20 wooden skewers submerged in water for 15 minutes
Dry Rub
8 tablespoons brown sugar
3 tablespoons kosher salt
1 teaspoon mild chili powder
1 teaspoon garlic powder
1 teaspoon cumin powder
1 teaspoon coarse pepper
Bbq Sauce
2 tablespoons of vegetable oil
½ diced onion
1 teaspoon minced garlic
1 cup ketchup
1 cup molasses
½ fresh lemon juice
1/3 cup white vinegar
2 tablespoons of dry rub (from above)
1 tablespoons of Worcestershire sauce
2 tablespoons of orange marmalade
Yellowtail Bbq Directions
1. Start with creating the dry rub. Inside a medium sized bowl, begin to add the brown sugar, salt, pepper, chili, cumin and garlic powder, and then mix throughly.
2. In a sauce pan, start creating the Bbq sauce by heating the vegetable oil, and then sautéing the onions first for a couple of minutes, then the garlic (don't forget to add a pinch of salt and pepper) for a total of 5 minutes. Now add the ketchup, molasses, and two tablespoons of dry rub, along with the lemon and vinegar Finally add the Worcestershire sauce and orange marmalade. Slow simmer for 30 minutes.
3. Now it's time to preheat the Bbq to as close to 500F as possible.
4. Back in the kitchen, begin to place the cut strips of yellowtail onto the soaked wooden skewers. And then, brush on vegetable oil onto each cut strip. Sprinkle the dry rub on each yellowtail skewer, and then cook on the Bbq for 2-3 minutes per side. Finally lather the Bbq sauce on the yellowtail skewers while the skewers are on the grill. Remove and serve with extra Bbq sauce. Enjoy!
