Tuna Melt Made From Smoked Tuna!

The first time I ate a tuna melt, I was sitting in my junior high school's cafeteria. The soft yummy layers of melting cheese, made the tuna salad sandwich was out-of-this-world. Now as a fisherman and a cook, I can easily enjoy a variety of tuna melt sandwiches, including this new recipe that I want to share with you. And guess what? I'm using smoked tuna!
I've been clearing out my freezer with the hopeful intent of
filling it with rockfish. I discovered a vacuum bagged piece of smoked tuna that needed to be eaten. That's when I thought about my childhood tuna melts. Can you imagine an already delicious tuna melt sandwich with real smoked tuna woven into each bite? If so, this tuna melt is for you.
By the way, homemade canned tuna would also work great

Tuna Melt Sandwiches (3 sandwiches)
½ pound smoked tuna, shredded
2 stalks green onion, chopped
¼ cup fresh dill, fine chop
2 tablespoons pickled sliced pepperoncinis
1 tablespoon pepperoncini pickling juice
½ fresh lemon juiced
Kosher salt
Cracked black pepper
6 slices cheddar cheese
6 slice sour dough bread
1 tablespoons butter
4 tablespoons mayonnaise
Making The Tuna Melt
1. Start by placing the shredded tuna, green onions, fresh dill, pepperoncinis, pepperoncini pickling juice, and mayonnaise into a medium sized mixing bowl. Add a pinch of salt, pepper and then mix. Taste for saltiness and acidity (sourness). Adjust as required, and then refrigerate until needed.
2. Now, start toasting the bread slices.
3. Over a medium low heat, melt the butter in a non stick frying pan until it becomes frothy. While the butter is melting, assemble the tuna melt by placing 2 slices of cheese on each slice of bread. Now, spread the tuna salad evenly over one slice of bread. And finally capping it with the other.
4. Begin frying the sandwich in the frying pan. Watch the edges of the bread for a golden brown color and of course the melting cheese! This should take around 3-4 minutes per side. Remove when done, forget about cutting the sandwich in half, just let it cool off and then start chowing down.
