Spicy Tuna Salad
This spicy tuna salad sandwich will be one to remember, just
like So Cal's 2014 fishing season. The recipe is packed with
yummy latin flavors, spices and of course, yellowfin tuna. The
sandwich combines apples, cilantro, lime juice and chili flakes f
or a latin tap dance inside your mouth! And just in case you'd

Why unusual numbers of yellowfin? No one really knows.
Huge schools of yellowfin tuna arrived in our waters early last
year. And then stuck around longer than expected. For months,
fishermen on sports boats, private boats and kayaks were
nabbing yellowfins, close to shore! I'm sure there are freezers
full of yellowfin fillets that need this spicy tuna salad recipe!
Yellowfin Tuna Salad Sandwich (4-5 sandwiches)
2 pounds yellowfin tuna or any fresh tuna (diced into
sugar cube sizes)
1 whole onion (fine dice)
1 whole apple (medium dice)
1 bundle cilantro (rough chop)
Kosher salt
Cracked black pepper
Pinch red chili flake
5-6 tablespoons mayonnaise
4 tablespoons olive oil
2 tablespoons salt/pepper
2 medium limes
4-5 medium bread rolls
Start Making the Spicy Tuna Salad Sandwich
1. Start by bringing a large pot of salted water to a rolling boil
(make your water salty like the ocean). Place the diced
yellowfin into colander, then place the colander into boiling
water, immersing all the tuna. Cook only long enough to turn
fish opaque (this should take less than a minute). Remove,
strain, and place into the refrigerator until the yellowfin is
chilled.
2. In a mixing bowl, add the chilled yellowfin, then add the
onion, the apple and cilantro.
3. Squeeze and add lime juice. Add 5-6 tablespoons of
mayonnaise and 4 tablespoons of olive oil. Add salt/pepper
to taste. Mix thoroughly. Taste for saltiness, add more salt i
f required and then taste for sourness, that is, its overall
acidity. Add more lime juice if more acid is required. Add
a couple of tablespoons of olive oil is if it is too acidic. Always
taste for acidity since it helps bring out overall flavors in your
fish, and leaves the eater longing for more. That's why lemon,
lime and vinegar always compliment fish dishes.
4. Prepare your favorite bread rolls by cutting into halves.
Toast them if desired. Spread your yellowfin spicy tuna
salad mix onto your bread, add a pinch of red chili flake and serve.
