Here's an easy spring roll recipe made with fresh
yellowtail. This new recipe will show you how easy
it is to bring all the ingredients together inside a
rice flour roll, that is, spring roll. Plus, learn how
to make a chili dipping sauce that is beyond
yummy!
I'm using yellowtail for the easy spring roll recipe.
And I love fishing for yellowtail, although yellowtail
fishing can be tough. In order to catch a yellowtail,
I usually pull out every trick in the book. The world
of yellowtail fishing can be far more cruel than one
might think. Yellowtail are cunning, fast, and full
of mockery.

Yellowtail Easy Spring Roll Recipe & Honey Chili
Dipping Sauce (serves 4)
2 pounds yellowtail fillets
1 packet rice paper
1/2 cup rice wine vinegar for basting & dipping sauces
2 tablespoons of chili garlic sauce
1 bottle Hoisin sauce
¼ cup of honey
¼ cup of vegetable oil
Salt/pepper
1 lime
1 bundle of chives, white or green, cut 4 inches in length
1 bundle of watercress, cut 4 inches in length
1 cup shredded carrots
Fresh rice noodles, 16-oz packet
Packet of sesame seeds, no more 4 ounces
Yellowtail Easy Spring Roll Recipe
1. Season the yellowtail fillets with salt and pepper. Grill
for 1-2 minutes per side. While the yellowtail fillets are
grilling create the basting sauce by combining ¼ cup of
vegetable oil and ¼ cup rice wine vinegar. Add salt and
pepper and mix vigorously until thoroughly mixed. After
the yellowtail fillets have cooked, immerse the fillets in
the basting sauce, allowing the fillets to reach room
temperature. Shred the yellowtail with a fork, and place
back into the bath of basting sauce.
2. Bring a pot of salted water to a boil. Add fresh rice
noodles and cook for no more than 10 seconds. Allow
rice noodles to cool to room temperature.
3. Create the dipping sauce by combining the honey,
chili garlic sauce, rice wine vinegar, and the juice of
one lime. Mix thoroughly to ensure the honey blends
with the other ingredients.
4. To create the spring rolls thoroughly wet a piece
of rice paper with cold water and place it on the work
surface. Add about 2 tablespoons of watercress,
shredded yellowtail, rice noodles, shredded carrots,
and chives. Roll by folding the left and right sides in,
and rolling the rice paper up from the bottom. Place
the springs rolls side-by-side on a platter, then add
several drops of Hoisin sauce to each spring roll,
and spread with a brush. Sprinkle sesame seeds on
top and serve with dipping sauce.
