Aku Tuna Poke


What's Hawaii's favorite fish for poke? Skipjack, but in Hawaii it's called aku tuna. And right now, our local waters are full of skipjacks because of our lingering El Nino. Our local commercial seiners are in hot pursuit of these skipjacks. But, how about our local fishermen? Are they taking skipjack home and turning it into table fare? I say skipjack can surprise the hell of you!

When properly bled, and put on ice from the start, skipjack makes for a mighty tasty poke, especially the small ones.

And that's what my new recipe is all about. Making a yummy poke, Hawaiian style from skipjack. Give this a try, and you'll see why Hawaii is crazy about their Aku Tuna Poke.

Aku Poke (severs 4)

4-5 small skipjacks fillets 2 pounds total

3 cucumbers cut into half moons

1 bundle green onions chopped

2 tablespoons sesame seed oil

1 tablespoon Sambal chili paste

1 small lime juiced

1/8 cup soy sauce

2 passion fruit, scooped out (substitute tangerines or sweet oranges)

Black sesame seeds

Start Making The Aku Poke

1. Start by cutting the skipjack fillets into one inch cubes and placing them into a bowl. Then, refrigerate until needed.

2. Next, create the poke sauce. Start by adding the soy sauce, Sambal, sesame seed oil, and lime juice into a small mixing bowl. Now mix throughly.

3. Next, add the cut cucumbers and green onions in a large mixing bowl. And, add the skipjack cubes, and scooped out passion fruit (seeds and all) with the vegetables. Again, stir throughly.

4. Finally add the poke sauce, mix and garnish with black sesame seeds. Serve, and enjoy.
